Apple Crisp

2 c. flour
2 tsp. baking powder
3/4 c. sugar
pinch salt
1 stick margarine
1 tsp. vanilla
4-5 baking apples
pinch cinnamon

Beat margarine and sugar until fluffy. Add flour, salt, baking powder, and vanilla. Mixture should resemble crumbs. Place 2/3rds of mixture on bottom of greased 9-inch round pan. Peel, core and slice apples. Layer on top of crumbs. Sprinkle with cinnamon. Top with remaining crumbs. Bake uncovered on 350 for 45 minutes.

This recipe freezes well. Substitute 1 can of blueberry pie filling for the apples to change this into Blueberry Crisp.
